Its sweetness and viscosity vary depending on its "Dextrose Equivalent" (DE) value.
Tomato paste is concentrated tomato solids. Cold Break (CB) tomato paste is processed at lower temperatures (65-75°C), preserving natural flavor and color, resulting in a thinner consistency. Hot Break (HB) tomato paste is heated to higher temperatures (85-100°C), inactivating enzymes, leading to a thicker, more stable product, ideal for sauces.
